Ranch Smash Burgers with Caramelized Onions & Roasted Root Veggies
These burgers are a staple in my house. I can guarantee that whenever I ask my husband what he wants in the dinner rotation for the week, he always asks for this! Here’s the deets…
SMASH BURGERS:
Ingredients:
1 package organic grass fed beef
Ranch seasoning (either DIY or I use Trader Joe’s!)
Salt + pepper to taste
Method:
Place your meat in a bowl and add your seasonings. Use your hand to combine the seasonings with the meat!
Form balls with the meat. They should be bigger than a ping pong ball but smaller than a baseball.
Heat up some oil of your choosing (I use olive oil) in a pan. When the pan is hot, place your meat on the pan. Use a spatula to smash the burger down to your desired thickness.
Let it cook for a bit before flipping over. Cook to your desired temperature depending on how you like your meat.
Medium Rare 135°F
Medium 145°F
Medium Well 155°F
Well Done 160°
If you want cheese, add it now! I like to cover the pan with a lid to help the cheese melt faster.
Enjoy!
ROASTED VEGGIE SIDE:
Ingredients:
organic Idaho potato
organic sweet potatoes
Salt + pepper
Extra Virgin olive oil
Italian seasoning
Method:
Wash your potatoes well, then cut your potatoes to your desired shape. I typically cut them into wedges but I have done cubed before!
Drizzle some olive oil on a baking sheet then place your potatoes. Add your seasonings, one more drizzle of olive oil, then mix with a spoon.
Cook these in the oven at 350 for about 15-20 minutes or until they’re easily pierced with a fork.
Enjoy!
BALSAMIC CARAMELIZED ONIONS:
Ingredients:
1/2 yellow onion, sliced
Balsamic vinegar
Sugar (I use organic cane sugar!)
Water
Olive Oil
Method:
Heat up a drizzle of olive oil in your pan. Once hot, add your onions and cook until softened.
If your onions are getting darker quicker than they’re softening, you can add a splash of water.
Once your onions are cooked, drizzle balsamic vinegar over them and about a 1 teaspoon of sugar. Stir to combine them both. Your onions will become jam-like. This is what we want!
Once your onions are dark and the vinegar has thickened with the sugar, they’re ready!
