Brown Butter Sourdough Discard Chocolate Chip Cookies
Here’s my take on the sourdough discard brown butter cookies that are going viral right now…
So. GOOD. Honestly, these are the best cookies I’ve made. They were super simple to make, too!
The sourdough makes these super soft but the amount of time in the oven gives them a subtle crunch that is perfect.
Anytime there’s a viral recipe, I’m always skeptical. In the past it’s been so hit or miss but this was definitely a hit.
Of course, I had to put my own spin on the recipe. Instead of cane sugar, I used coconut. Instead of cornstarch, I used arrowroot. Also, be sure to get all the nutrients you can by using grass-fed butter and a pasture-raised eggs. Arrowroot powder instead of cornstarch also adds a nice fiber boost!
It’s cookies, we know it’s not healthy. But super simple swaps help take an unhealthy cookie turn into a less-unhealthy cookie. It’s about the little things! Make the cookies, eat the cookies, and enjoy the cookies. No guilt allowed.
INGREDIENTS:
2 cups flour
1 tsp baking soda
2 tsp arrowroot flour (or cornstarch)
1 tsp salt
1.5 sticks (12 tbsp) of grass-fed butter
1 cup of brown sugar
1/4 cup coconut sugar
1 egg
a splash of vanilla extract (about 1/2 tbsp)
1/2 cup of sourdough discard
1 1/4 cups of chocolate chips
METHOD:
Brown your butter in a small saucepan on medium heat. Stir occasionally. Warning, it will splatter! Continuing to stir will help this, or you can cover it with a lid. You want your butter to be a dark golden yellow color. Once achieved, remove off heat and put your butter aside to let it cool.
Mix the flour, baking soda, arrowroot, & salt into a bowl. Set aside.
Once your butter is cooled, mix it with your coconut sugar and brown sugar. It should come together nicely, but thick.
Add in your egg and your sourdough discard. Mix.
Add in half of your dry ingredients. Mix. Then add the other half. Do not over-mix!
Fold in your chocolate chips, cover your bowl, and put it in the fridge for at least 30 minutes or until you’re ready to bake.
Bake your cookies at 350 for around 10 minutes, or until they have achieved your desired crispiness (or gooeyness!)
