Gut Healthy Mac & Cheese

I have been on such a mac & cheese kick lately and my toddler definitely doesn’t mind it.

One of my passions is to take a normal recipe and to “kick it up a notch” health-wise which is exactly what I did with my normal mac & cheese recipe.

In this recipe, I upped the protein & nutrient content by adding bone broth, raw milk, and raw cheese. Trust me, you can’t even tell the difference.

You may have to adjust the recipe accordingly depending on your family’s size. As it’s just me & my toddler right now, I made half of this recipe which was plenty. Use your best judgment and make it your own!

INGREDIENTS:

  • 1/2 cup of water

  • 1/2 cup of bone broth

  • 1 overflowing cup of pasta

  • 2 tbsp grass-fed butter

  • 1/2 tbsp arrowroot powder

  • 1/2 cup of raw milk

  • 1/4 cup of the drained pasta liquid

  • spices of your choosing! (I used a dash of the following: salt, pepper, onion powder, garlic powder & Italian seasoning)

  • raw cheese - I used Trader Joe’s raw gruyere cheese & raw cheddar cheese (measure with your heart here)

METHOD:

  • Add your 1/2 cup of water and 1/2 cup of bone broth to a pot and let it come to a boil.

  • Add in your overflowing cup of pasta and cook until it’s well done.

  • Drain your pasta water into a bowl until you have about 1/4 cup, then pour the rest out. Set your pasta aside.

  • Melt your butter in a pan and add in your arrowroot powder. Whisk these two together until they thicken.

  • Add in your pasta water + milk and whisk until well combined.

  • Add in your cheese and spices & stir until it’s melted and combined. Since we measured the cheese with our heart here, feel free to add more of anything if you feel like it needs it!

  • Add in your pasta and combine it all together.

  • ENJOY!
