Maple Butter Peach Cobbler
This maple butter peach cobbler is to die for. Top it with vanilla ice cream and you have yourself the perfect summer treat.
Here's how to make it...
INGREDIENTS:
Cobbler:
- 1 stick of grass-fed butter
- 1 cup of flour
- 1 cup coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- pinch of salt
- 1 cup of milk
- 1 tablespoon vanilla
- 5 peaches (or as many as needed to fill your dish) cut into wedges
- 2 tablespoons of maple syrup
Maple Butter:
- 4 tablespoons of grass-fed butter
- 1/4 cup maple syrup
METHOD:
- Preheat the oven to 375. Cut your stick of butter into smaller pieces and drop it into your casserole dish. Place it in the oven while it preheats to melt the butter completely. Remove once the butter has melted.
- Stir together flour, 3/4 cup of coconut sugar, baking powder, cinnamon, and a pinch of salt. Then add your wet ingredients and mix until it's well-combined.
- In a separate bowl, mix 1/4 cup of coocnut sugar with your cut peaches and 2 tablespoons of maple syrup.
- Layer half the peaches over the melted butter, then pour over your batter. Place the remaining peaches on top of the batter.
- Bake for 45 minutes or until the edges begin to brown.
- Next, make your maple butter by melting butter in pan. Add your maple syrup and mix. Let it come to a boil, then remove from the heat.
- Drizzle the maple butter over your peach cobbler. Serve & enjoy!
